Ingredients Rice. Coconut oil. Pappadam. Lentil. Grated coconut. Shallots. Garlic. Cumin. Green chilies. Turmeric powder. Curry leaves. Dried chilies. Method 1)Clean the rice well. Heat water when the water comes to a boil add rice. When the rice is cooked add salt and remove it from the flame. 2)Boil water in another pot. Once the water comes to boil add in the cleaned lentil and salt. Cover and cook. 3)Crush grated coconut, shallots, garlic, green chilies, cumin, curry leaves, and turmeric powder. 4)When the lentil is cooked add the crushed mixture, remove it from the flame. 5)Heat a pan with oil, splutter mustard. Saute in shallots, dried chilies, and curry leaves. Saute in the cooked lentil. 6)Heat oil and fry the papad. 7)Serve the kanji payar and papad hot. ആവശ്യമായ ചേരുവകൾ അരി വെളിച്ചെണ്ണ പപ്പടം പയർ തേങ്ങ ചിരകിയത് ഉള്ളി വെളുത്തുള്ളി ജീരകം പച്ചമുളക് മഞ്ഞൾപൊടി കറിവേപ്പില വറ്റൽ മുളക് (ചേരുവകൾ ആവശ്യത്തിന് ) തയ്യാറാക്കുന്ന വിധം 1. അരി നന്നായി കഴുകുക. വെള്ളം ചൂടാക്കി അരി അതിലേക്ക് ഇട്ട് വേവിക്കുക. വെന്തു വരുമ്പോൾ ആവശ്യത്തിന് ഉപ്പ് ചേർത്ത് ഇളക്കി വാങ്ങുക. 2.ചട്ടിയിൽ വെള്ളമൊഴിച്ചു അടുപ്പത്തു വക്കുക. പയർ കഴുകി അതിലേക്ക് ഇടുക.ശേഷം ഉപ്പ് ചേർത്ത് പയർ വേവിക്കുക. 3.തേങ്ങ ചിരകിയത്, ഉള്ളി, വെളുത്തുള്ളി, പച്ചമുളക്, ജീരകം, കറിവേപ്പില, മഞ്ഞൾ പൊടി എല്ലാം കൂടെ ചതച്ചെടുക്കുക 4. പയർ വെന്തു വരുന്ന സമയത്ത് അരപ്പ് കൂടി ചേർക്കുക. വെന്തു കഴിയുമ്പോൾ ഇളക്കി വാങ്ങുക. 5.ഉള്ളിയും വറ്റൽമുളകും ചെറുതായി അരിയുക. തളിക്കാനായി ചട്ടി അടുപ്പത്തു വച്ച് എണ്ണ ഒഴിക്കുക.എണ്ണ ചൂടാകുമ്പോൾ കടുക് പൊട്ടിക്കുക. ക്രമത്തിൽ ചെറുതായി അറിഞ്ഞ ഉള്ളി, വറ്റൽ മുളക്, കറിവേപ്പില എന്നിവ വറത്തു വേവിച്ചു വച്ച പയറിലേക്ക് ചേർക്കുക 6വെളിച്ചെണ്ണ ചട്ടിയിൽ ചൂടാക്കി പപ്പടം കാച്ചുക. 7.കഞ്ഞിയും പയറും പപ്പടവും പാത്രത്തിലേക്ക് വിളമ്പുക. അച്ചാറുണ്ടെങ്കിൽ അതും വിളമ്പുക.പ്ലാവില കോട്ടി അതിൽ കഴിക്കുകയാണെങ്കിൽ സ്വാദ് കൂടും. നല്ല നാടൻ കഞ്ഞിയും പയറും പപ്പടവും റെഡി. Kanji payar chamanthi and pappadam is a classic Kerala combination. Kanji is tarditionally made with matta rice. Payar is cherupayar thoran or green gram/whole moong dal stir fry with a kerala touch. The cooked gram is seasoned with crushed coconut, oniom, cumin, garlic and green chilli. Chamanthi is a ball of flavour. The chillies are roasted on flame and ground with coconut, shallots, ginger. The smoky flavour of chillies makes unparalleled taste with a bright red color. It was considered a royal food during the days of Chola/Chera kingdoms. To remove the husk from the matta rice, the rice grain is soaked, boiled, soaked and dried. Then in a local mill, it is lightly crushed to break the husk and brushed against a belt to release the husk. Then the husk is blown off while the ‘rice kernel’ is collected. Kerala matta rice, the rice is NOT Polished, but since it does brush against a belt (to remove the husk), some people may consider this polishing – but it is not. It is the bits of husk still sticking to the rice grain that give it the reddish-brown tinge on the cooked rice, which you can see on the video. Red rice is rich in fiber and selenium. The high fiber content helps to keep you full and satiated for a long time and thus helps with weight loss. Selenium is needed for a healthy thyroid and it helps to decrease symptoms of asthma, arthritis etc. It takes longer time to cook.

After an exhilarating and mouthwatering first day in Kerala, I was ready for day two! Come along with me and my boy Vishnu as we get an authentic Kerala breakfast of pazhamkanji before we head off to the Jatayu Rock Sculpture in Kilimanoor, India! Vishnu: 🤍 We started at R.B. Tea Stall on our way to the small town of Kilimanoor, which is roughly 20 miles northwest of Trivandrum. There, I tried two glasses of the best chai I’ve ever had in my life. They only costs 8 rupees/$0.11 USD each. Then, Vishnu gave me a snack from his home that his wife made for me called terali. It’s made of rice flour, jaggery, and sugar, and comes wrapped in a bay leaf. It was really sweet from the jaggery and was fantastic! Then, I dipped it into the chai. The cinnamon and cardamom were so good! After the chai, we headed back out and continued our drive to Kilimanoor, past coconut and banana trees, gardens, and tea shops. After a while, we arrived at the Janarthana Hotel in a village called Chadayamangalam. There, we got pazhamkanji, the most traditional food you can eat in Kerala. It’s a fermented rice gruel mixed with mashed cassava, curd, gooseberry pickle, bird’s eye chili, onion, and coconut chutney. You mix it all up with your hands really well and then dig in. We had it with some chicken and some fish curry. All three dishes together only cost 60 rupees/$0.79 USD! I dug right in with my hands. It was really incredible just to mix it with my hand! I loved the spicy combination, and the cassava was excellent. I also loved the saltiness and spiciness of the fish curry. I added a chili, which turned out to be one of the spiciest chilies I’ve ever had in India! Then, I poured in some chicken curry, which contained an unbelievable gravy. The chicken itself was also super fresh and tender! The textures were unbelievable. When the heat got too bad, I added some curd to temper the fire in my mouth! Finally, I added some of the gravy from the chicken curry. The combination of sour, salty, and spicy blew my mind! After my meal, I washed my hands, and then we headed to Jatayu Earth’s Center, which is famous for its massive statue of the divine bird Jatayu. The concrete statue is a whopping 200 feet long, 150 feet wide, 70 feet tall, and takes up 15,000 square feet of space! Here are the prices of everything to do there: Parking: 20 rupees/$0.26 USD for two hours Walk to the Statue: 250 rupees/$3.30 USD Cable Car Ride to Statue: 450 rupees/$5.94 USD Adventure Center: 500 rupees/$6.60 USD Helicopter Tour: 2,400 rupees/$31.68 We took the cable car and got an aerial view of the boulders and vegetation below us. The statue itself the largest bird sculpture in the world and symbolizes the protection and honor of women. It was super windy up at the top, which is 1,000 meters (3,280 feet) above sea level. There, we got unparalleled views over Kerala! I suggest walking around the grounds and going to the amphitheatre, where you get beautiful views over Kerala and of the bird statue itself. There, you can see temple dedicated to Lord Rama and his holy footprint! Vishnu and I got exclusive access to go inside the bird statue and see the view from its eyeball. It was literally a bird’s-eye view! The views were gorgeous, and I could see the claws and the wings so well! Then, we walked the 826 steps down to the bottom. I had to walk off all that pazhamkanji! Ingredients 1 cup leftover boiled rice 2 cups water 2 tbsp curd 5 bird’s eye chillies 2 shallots Sea salt to taste Preparation Soak the leftover boiled rice in water, cover and leave aside for overnight fermentation. The next morning, crunch shallots and bird’s eye chillies, and add to the rice gruel, along with the beaten curd. Season with sea salt. Serve with pickles or chutney. Eat cold for breakfast or lunch.
