In this video, we’re going to talk about why spinach is the worst source of iron. Now, you may have seen Popeye and his many cans of spinach and thought that spinach was a great source of strength-building iron. But, in fact, it’s a bad source of iron, and it won’t do much for you. There are two sources of iron: heme iron and non-heme iron. Non-heme iron is found in plants—it’s not very bioavailable. Since non-heme iron has low bioavailability, this means that you won’t be able to absorb the iron found in many vegetables, like spinach. You would need about 10x as much non-heme iron as heme iron. Another reason why spinach (and swiss chard) is a bad source of iron is that it’s packed full of oxalates. Oxalates bind with iron, making it almost entirely non-bioavailable to you. To make matters even worse, spinach is high in polyphenols. Polyphenols happen to block the absorption of iron as well. You might also be wondering if beans, legumes, seeds, nuts, and grains are good sources of iron. Although they do contain iron, they also contain a lot of phytates. Phytates block the absorption of iron along with calcium and zinc. Of course, I’m not saying you shouldn’t have spinach and other healthy vegetables. Instead, I’m suggesting that you get your iron from other food sources. How to Cook: How to Cook Spinach 2 min! Ingredients: 1 pound fresh spinach 1 tsp lemon juice 1 medium fresh garlic, pressed or chopped 1 TBS extra virgin olive oil salt and cracked black pepper to taste Optional: chopped tomato kalamatta olives cashews goat cheese a few drops soy sauce Directions: Chop or press garlic and let it sit for 5 minutes to bring out its health-promoting benefits. Bring lightly salted water to a rapid boil in a large pot. Cut stems off spinach leaves and clean well. This can be done easily by leaving spinach bundled and cutting off stems all at once. Rinse spinach leaves very well as they often contain a lot of soil. Cook spinach in boiling water for 1 minute. Drain and press out excess water. Toss in rest of ingredients while still hot.

You've Been Eating Spinach Wrong... And This Could Harm Your Kidneys!


Have you ever watched Popeye cartoons? If you’ve ever eaten spinach thinking that it would make you as strong as him, you should know that this vegetable can actually bring you more harm than benefits, if it’s consumed in the wrong way. The spinach myth started a long time ago, in 1870, with the American researcher Dr. E. Von Wolf. One of his articles was published with a typo: the number that indicated the amount of iron present in spinach was missing a decimal point. It made it seem as if spinach contained ten times more iron than it actually does. The typo was fixed after a few decades, but by then the myth had already spread. Iron is a very important mineral for our bodies and when we don't eat enough of it, we may get anemia associated with an iron deficiency. It’s a disease that normally makes people lose their appetite, feel tired, look pale, lose their desire to work, and have difficulties learning. Not only does spinach not contain as much iron as people thought, it also has a substance called oxalic acid, that keeps your body from absorbing iron, causing it to be eliminated through your bowel movements. A large quantity of this acid in your blood could even contribute to the formation of kidney stones, and other disorders—especially in your liver. So anyone with kidney problems or rheumatoid arthritis should avoid consuming large quantities of this acid. Apart from this, some nutritionists say that cooked spinach should be consumed immediately, because if you keep it in the refrigerator, it may start to produce toxic substances. Now that you know the truth about spinach, you may feel tempted to cut it completely out of your diet, but we aren't through yet. Popeye's favorite food contains anti-oxidant substances, as well as several vitamins. A cup of raw spinach can give you your daily intake of vitamin A, and half of the recommended daily allowance of vitamin C. You still need to be careful when you eat spinach. Consume it in moderation, and don’t overdo it— especially with small children. In order to better benefit from spinach, eat it raw or lightly steamed. After finishing with photographing they tasted a bit like grass, slightly bitter. Week after that their taste had slight resemblance to sorrel. But no where near as sour. Guess that was leaves with different age. Classic Creamed Spinach RECIPE COURTESY OF AMANDA FREITAG Level: Easy Total: 35 min Active: 25 min Yield: Makes 8 cups, to serve 8 to 10 Ingredients Kosher salt 2 pounds baby spinach 1/2 cup (1 stick) unsalted butter 1/2 cup all-purpose flour 2 1/2 cups milk 1 cup heavy cream Freshly ground black pepper 1/8 teaspoon cayenne pepper 1 tablespoon extra-virgin olive oil 1 cup Spanish onion, 1/4-inch dice 3 cloves garlic, minced 1/8 teaspoon freshly grated nutmeg Directions Blanch the spinach. Bring 1 gallon water to a boil in a large pot. Add a pinch of kosher salt. Place the spinach in the boiling water. After 45 seconds (exactly), remove the spinach leaves with a slotted spoon, spider or tongs and drain in a colander. Let cool completely. Use your hands to press the spinach against the sides of the colander. When most of the liquid has been released, squeeze handfuls of the spinach to make sure all of the excess water has been removed. Set aside. In a wide, high-sided saute pan, melt the butter over medium-low heat. With a wooden spoon, stir the flour into the melted butter to create a roux that will look like wet sand. Cook the roux for 3 minutes, stirring continuously to make sure it doesn't burn and it becomes a "blond" color. Add the milk to the roux, whisking vigorously to make sure that the roux completely dissolves into the milk without lumping. Turn down the heat to maintain a low simmer. You're making a bechamel sauce, which is the base for the creamed spinach. Next, whisk in the cream and return the mixture to a simmer. Cook the bechamel until thickened and smooth, about 5 minutes, stirring often. Season the sauce with the salt, pepper and cayenne. Preheat a small saute pan over medium-high heat. Add the oil and let heat for about 1 minute. Add the onions and season with a pinch of salt. Cook until the onions soften and become translucent, 2 to 3 minutes. Stir in the garlic and cook an additional minute or two. Add the cooked onion and garlic along with the drained spinach to the bechamel, folding to make sure it's completely coated with sauce. Season with the nutmeg. Cook for 2 minutes, then taste the spinach. Adjust the seasoning with more salt and the nutmeg, and/or more cayenne if desired. Cook’s Note Prep: Thoroughly wash the spinach. Peel and dice the onion. Peel and mince the garlic. Use whole nutmeg freshly grated with a Microplane when possible. Like many whole spices, nutmeg dies a pretty quick death when ground before it's needed. It's important to cook your roux, or you'll end up with a raw-flour taste in your spinach. This bechamel sauce is a classic French mother sauce, the basis for many sauces and dishes, including mac and cheese and fondue. The darker the roux, the more nutty and intense the flavor it will give a sauce. Here the roux doesn't need to be cooked further than a light, or blond, color. Serve with grilled steak, chicken or just about any grilled or roasted meat.
