Ingredients (Serves 12 – 15 people): For ada: Kuthari / Kerala matta rice – 200g (Soaked for 2 hours) Ghee - 1tbsp For payasam: Ghee – 1 tbsp Milk – 2 liter / 8 cup Water – 1½ liter Sugar – 400g Steps: Grind soaked rice to a smooth paste adding some water. Grind in batches. Add ghee and mix thoroughly. Add water if required, and make the consistency of batter to that of idli batter. Drop a few spoons of the batter into the banana leaf/aluminum foil and spread it as a thin layer using a butter knife/spoon. Fold the foil paper carefully. Tie it up with a string if you are using fresh banana leaves. Repeat the process for the rest of the batter. Boil water in a wide pan. When it comes to a rolling boil, slide the folded foil paper to the pan and cook uncovered on high flame for 7-10 minutes. Transfer the cooked ada to a bowl of water (at room temperature) and let it sit for another minute to cool down. Then open the foil paper and slide out the ada to the water. Gently rinse the ada 5-6 times under running water in a colander. Cut into small pieces by pressing it on to a strainer. You can prepare the ada in advance and store in the fridge. To make payasam, heat ghee in a wide heavy bottomed pan. Add water and bring to boil on high flame. Add milk. Stir often and scrape the sides. When it reduces by 2litre and the milk thickens, add cooked ada. Once the milk boils after adding ada, add sugar. Cook uncovered stirring for another 45-60 minutes to till the payasam thickens. Turn off the heat and keep stirring for another 10 minutes to avoid the formation of cream on top. It further thickens on cooling. Enjoy the palada pradhaman! U will get 11/2 glass of thick milk(1st extract).. Then add 3 glass of water to the ground coconut and grind again and extract 3 cup of milk (2nd extract).. Now add 4 glass of water and grind it again and extract 4 cup of milk ( 3rd extract) ..Keep all the milk aside … Now boil 1 cup of water and jaggery ..Keep on stirring till it get melt. . 2nd step Add ada in 8 glass of boiling water and cook well. (If the ada is long in size cut into pieces by hand).Once it become very soft remove from the fire and drain them … or u can pressure cook ada in medium flame for one whistle .. Drain and pour cold water over them until the stickiness goes .. . Fry coconut ,cashews in 1 tbsp of ghee and keep it aside( fry them separately) . 3rd step Heat a thick deep bottomed pan or uruli and add melted jaggery ..Now add the cooked ada and sago together in to the jaggery and stir well .(Sometime u will find the ada to be hard and sticky ,don`t worry it will get separate and become soft while stirring ) ..Stir continuously and cook until the mixture becomes thick and start separating from the sides of the pan.. Now add 50 gm of ghee in to it and stir well. Then add the 3rd milk and mix well it till boils.. Cook till it becomes thick .Add one pinch of salt .When it become thick, add the 2nd milk and stir well until it become thick again. . Now add the 1st extract (onnam palm) and stir well..Dont boil.. Remove from the fire and add the fried cashew nuts and coconut …Add the cardamom powder and dry ginger powder and close the pan with a tight lid for 5 minutes..Mix well…So ur tasty Ada Pradhaman is ready to serve ….. Note If u feel ur pradhaman to be too thick u can dilute it by adding more thick coconut milk or drinking milk.Follow the same when u feel that the pradhaman is sweeter than ur preference.The jaggery i get here is golden colour,thats y my adapradhaman looks golden .. It's a traditional payasam which is smooth and silky in texture. It has only 3 ingredients milk, sugar and ada, which is made of rice batter. Method Milk -3 litres Ada - 400 gms Sugar - 1 cup + 4 tbsp Add 2 litres of milk to a pressure cooker and add 4 tbsp of sugar. Boil the milk and let the sugar melt. Close the lid of the pressure cooker and let it cook on low for 1 and half hours. Meanwhile clean the ada and cook it in 1 litre of milk plus half cup water. It will take 15-20 mins to cook. Don't add sugar until ada is cooked. Add the cooked milk to the cooked add and let it cook together for another 15-20 mins. When it is 80% done add sugar. Add 1 to 1 and half cups depending on your taste. Turn off the flame a few mins before it reach the desired consistency. After half an hour the payasam will get to the right consistency. Repeat the process for the rest of the batter. Boil water in a wide pan. When it comes to a rolling boil, slide the folded banana leaves to the pan and cook uncovered for 10 minutes. Transfer the cooked ada to a bowl of water (at room temperature) and let it sit for another minute. Then open the leaf and slide out the ada to the water. Gently rinse the ada under running tap water and cut into small pieces. To make payasam, heat a wide pan and add two cups of water and eight cups of milk. Bring to a boil. Stir often and scrape the sides. Add sugar and cooked ada. Cook uncovered stirring continuously till the mixture reduces to half. Turn off the heat and keep stirring for another 10 minutes to avoid the formation of cream on top. It further thickens on cooling. Enjoy!

Ingredients: Semiya / Vermicelli – 1 cup (Unroasted) Sugar –3/4 cup (However, this won't be as sweet. If you want it to be sweeter, add 1 to 1 1/4 cup of sugar...water same) Milk – 4½ cup Sabudana / Sago – ¼ cup Ghee Cashew nut Raisins Cardamom powder Steps: Add sabudana and ¾ cup water in a pan. Bring it to a boil and reduce the flame to low. Cover and cook till it is ¾th cooked. Switch off and set aside. To caramelize the sugar, heat a heavy bottomed pan and add sugar. Wait for the sugar to melt on low heat and turn golden brown. Keep stirring. Add ½ cup water. The sugar syrup will solidify immediately. Increase the flame to medium. Keep stirring till it dissolves and gets mixed well. Add milk and bring it to a boil. Heat ghee in a pan and add semiya. Keep stirring till it turns golden. Add the milk mixture to semiya. Increase the flame and bring it to a boil. Add cooked sabudana. Cook semiya stirring. Add cardamom powder. Switch off. It will thicken further on cooling. Heat ghee in a pan and roast cashew nuts till golden. Add raisins and roast well. You may also add dates. Add this to the payasam. Enjoy the semiya payasam. Ingredients: Moong dal (Cheruparippu) – 1 cup + 3 tbsp Milk – 3 cups Jaggery - 450g Ghee Coconut bits Raisins Cardamom powder Steps: Wash and drain the moong dal. Heat a pressure cooker and add moong dal. Add 1½ tbsp ghee and roast till golden. Reduce the flame and add 2½ cups water. Pressure cook for 1 whistle on high flame and for another 5 minutes on low flame. Melt jaggery in 1½ cups water. Bring 3 cups of milk to boil and reduce the flame to lowest. Add jaggery syrup to cooked moong dal and cook till it becomes dry. Add a pinch of salt. You may also add dry ginger powder or cumin powder. Add boiled milk. When it starts to boil, switch off. Heat ghee in a pan and roast coconut bits till golden. Add raisins and switch off. Add this to payasam. Leave it covered for 10-15 minutes. Enjoy the moong dal payasam. Ingredients: Split moong dal / Split green gram dal / Cheruparippu – ½ kg Thick coconut milk – 1½ cup Thin coconut milk – 3 cup Jaggery – 1 kg (Melted and strained) Ghee Cardamom (Crushed) Water – 3 cup Coconut bits Steps: Heat ghee in a heavy bottomed pan. Add cleaned moong dal and fry till it turns slightly golden. Add water to cook dal. Cover and cook till dal is done. Add jaggery syrup. Make sure that the dal is cooked well before adding jaggery. Bring it to boil and reduce the jaggery syrup by half. Keep stirring. When it reduces by half, add thin coconut milk. Bring it to boil and reduce the thin coconut milk by half. When it reduces by half, add thick coconut milk and crushed cardamom. When it comes to a boil, switch off. Heat ghee in a pan and fry the coconut bits till golden. Add this to payasam. Enjoy the cherupayar payasam.
