Inside El Pica 1 in Texcoco, Mexico, the original barbecue of the Americas is still being cooked low and slow inside of pit ovens. The restaurant’s lamb barbacoa recipe starts with wrapping lamb in long maguey leaves, and cooking it overnight for 11 hours to create a tender barbacoa full of sweet and smoky flavors. The restaurant sells around 500 pounds of barbecue every weekend for $10 a pound, serving nearly 1,200 people in two days. Petra Zavaleta is the chef behind Barbakush, a street food operation that serves traditional lamb barbacoa in Los Angeles, by way of Puebla, Mexico. Petra, her husband, and her sons work together to create their lamb barbacoa, which is a true labor of love. They break down an entire lamb and build a traditional underground barbecue oven in their backyard. They serve their barbacoa on hand-made tortillas, and use every part of the lamb to create more dishes like consommé and lamb menudo. Petra, who learned this ancient method of butchering and barbecuing from her childhood in Puebla, is driven to succeed by doing things her own way. Today I want to share with you how to make the best barbacoa de res, traditionally it is made out of sheep, or goat it is slow-cooked over an open fire or, more traditionally, in a hole dug in the ground covered in maguey leaves, since I don't have a hole outside my backyard and times have changed, now things are made easier for us to obtain the same great flavor in the comfort of our home! I will be showing you the easiest and most delicious way to make barbacoa de res( because we personally don't like goat or sheep jijiji) you can use whatever your preference is just make sure the meat is high fat content. You can serve in in tacos, enchiladas, burritos or just by itself with a side of rice! Whatever way you choose to enjoy this delicious recipe, I promise you, you will not regret it! Welcome to the Oaxacan countryside, where we will be meeting a local family that makes barbacoa (Mexican BBQ) in an underground pit. It took us about 2 hours to drive into the mountains of Oaxaca to the village of Villa Sola de Vega. We are showing you how it is made from scratch with 100KG of marinated beef! Watch the process from start to finish, and see how the entire barbacoa is sold out within minutes. The end result is mind-blowing! The family was kind enough to also have us for breakfast. Our breakfast appetizer was homemade Mezcal and chapulines. After some snacking and drinking, we joined the whole family in the dinning room to have tamales (made with Oaxacan mole), concha and Mexican hot chocolate. Absolutely delicious! We also visited a real Mezcal producer in another rural village. We were shown how they produce pure Mezcal from the agave plant, how the pulp is fermented and then double distilled. Their Mezcal is purely organic and WOW super strong! The Mezcal has a distinct smokiness that makes it so unique. Best Barbacoa You Will Ever Eat! How to Make The Best Barbacoa! Keto, Healthy Recipe 🤍 Barbacoa Recipe: 🤍 Servings: 6 Ingredients: 1.5 pounds beef brisket ½ white onion, halved 3 cloves garlic 2 bay leaves salt to taste water to cover 3 small guajillo chile peppers, seeded and deveined Sauce Ingredients below for stove top: 1 small ancho chile peppers, seeded and deveined 1.5 tablespoons white vinegar 3 whole cloves 2 whole allspice berries ¼ teaspoon ground black pepper ⅛ teaspoon dried oregano 1 teaspoon of chicken bouillon ⅛ teaspoon dried thyme ⅛ teaspoon cumin seeds ⅛ teaspoon ground ginger 1 pinch ground cinnamon salt to taste Directions: Sear your beef brisket on all sides. Place the brisket in a stovetop pressure cooker and all the ingredients Cook for 1 hour 15 minutes Once the pressure cooker is ready to Remove brisket from the pressure cooker and set aside. Strain the cooking liquid. Take what is in the strainer and add it to a blender plus 2 cups of the broth and reserve the rest.. Blend well and add salt to taste. Place brisket and blended sauce in the pressure cooker pot and simmer it for 30 minutes on the stovetop slightly covered. Remove from heat and serve! For Stovetop: Sear brisket on each side. Add brisket to a pot with water to cover it add in the onion, 1 clove of garlic, bay leafs, guajillo peppers and salt to taste. Boil until meat is tender. Anywhere between 3 to 4 hours. For making the sauce stove top: Combine guajillo chile peppers and ancho chile peppers in a saucepan. Cover with water, bring to a boil, and cook for 5 minutes. Remove from heat and let stand in the hot water until softened, about 5 minutes and drain Combine softened chile peppers, vinegar, garlic, cloves, allspice, black pepper, oregano, thyme, cumin, ginger, cinnamon and reserved 2 cups cooking liquid; blend until thick and very smooth. Pour sauce into a pot over medium heat and season with salt. Bring to a soft boil; reduce the heat to low. Stir in shredded beef, coating completely with sauce. Here is the way I like to make Mexican barbacoa at home. I put all of my ingredients in the Crock Pot overnight and wake up to tender fall apart barbacoa. As a kid, I remember waiting in a line out the door at our neighborhood Mexican meat market for fresh corn tortillas, menudo and barbacoa. You can make barbacoa tacos dresses with your favorite salsa, fresh onion, cilantro and a squeeze of lime for the perfect breakfast taco. INGREDIENTS 2 bls beef cheek meat (stew meat or beef tongue work too) 2 tsp salt (1 1/2 tsp if using fine table salt) 2 to 3 cloves fresh garlic 2 bay leaves 1/2 small onion 5 to 8 drops of liquid smoke (optional) 2 tbls water (optional - to combine with liquid smoke) CROCK POT 🤍 Crock Pot Cook overnight on LOW for 12 hours OR cook on HIGH for 8 hours Check out some of me other recipes! We landed at Benito Juárez International Airport and I had arranged for a driver to meet us at the airport to take us first to eat barbacoa - one of the ultimate of all Mexican meat dishes, and then on to go to the Aztec Pyramids of Teotihuacan. We drove straight to a small town in the mountains called Texcoco. The hills around Texcoco are known for their barbacoa, Mexican style of barbecue. Even when I was in the US, I remember seeing little hole in the wall restaurant serving “Barbacoa estilo Texcoco,” Texcoco style Mexican barbacoa - so it’s famous for this dish. El Pica I - The restaurant I wanted to try was El Pica I, and even in this small mountain town, the restaurant was absolutely bumping - there was a meat party happening. You could smell the aroma of the lamb as we drove in. You choose a table, and you walk around and self serve your food. There are many Mexican foods to eat, but the real reason you come here is for the lamb barbacoa - the most insane lamb pit bbq! The meat is cooked in underground clay ovens, and when they open an oven it looks like they are opening a mine. The lamb barbacoa was some of the most tender meat I’ve ever experienced. It was fatty and juicy and ultra flavorful. Price - 800 MXN ($42.95) for 2 kg. Teotihuacan - Stuffed full of lamb, we continued on to Teotihuacan, the ancient Aztec city, known for its giant pyramids. Unfortunately since we went on a Sunday, it was absolutely packed, so busy that we couldn’t even hike to the top of the Pyramid of the Sun because we ran out of time. But nevertheless, it was still worth visiting and it’s very impressive to see. Entrance price - 70 MXN ($3.76) Highlight of today for me was the insanely irresistible lamb barbacoa in Texcoco, WOW. Homemade shredded beef tacos (barbacoa) with fresh roasted tomatillo salsa are one of our favorite foods to make and eat. We have a serious love affair with these easy barbacoa tacos, but tacos taste good so no surprise there. This recipe in particular is heavy on flavor, gives us an excuse to break out the instant pot, and comes together really quickly! Oh and don't snooze on this roasted tomatillo salsa. It makes the dish and is better than anything you can buy in stores. You'll want to make extra to keep in the fridge for dippin those chips throughout the week. INSTAGRAM: 🤍 INSTANT POT: 🤍 ||RECIPE|| FOR THE BARBACOA 3.5-4lb BEEF CHCUK ROAST 2 CUPS STOCK or WATER JUICE OF 1 ORANGE 1 RED ONION 4 GARLIC CLOVES 1 TBPS CUMIN GROUND 1 TBPS PAPRIKA 2 TBPS CHILE POWDER 1 TBPS DRIED OREGANO 1 TBPS SALT 1 TBPS SUGAR 1. Cut Beef into 3" by 1" pcs, trim any excess fat or silver skin 2. Puree stock, spices, salt, sugar, onion, garlic, and orange juice 3. In an instant pot, or pressure cooker, combine beef and cooking liquid. 4. Pressure cook on low pressure for 1 hour, let pressure release naturally for 20-30 minutes 5. Pull beef out of liquid with slotted spoon and reserve 1-2 cups cooking liquid 6. Preheat large nonstick pan over high heat 7. Sear braised beef for 8-10 minutes, breaking up and shredding in pan 8. Deglaze with cooking liquid, cook down till glazed and well coated 2-3 minutes. Season with salt and lime juice if needed. Serve on tortillas with cilantro, onion and salsa FOR THE SALSA 1 lb. FRESH TOMATILLOS 1 MEDIUM RED ONION 4 CLOVES GARLIC 2 POBLANOS 2 TSP KOSHER SALT 1. Large dice the onion, poblano and tomatillos 2. Peel and Smash garlic cloves, combine all veg on small sheet tray to broil 3. With broiler on high, roast tray until chawed on top and steamed tender. 4. Move contents of tray to food processor to cool for 10 minutes. Add 2 tsp salt 5. I want to incorporate smoke into all of my dishes, so I decided I would smoked the beef cheeks before the traditional braise. Fortunately it doesn't take long for these cheeks in the smoker. Also, the braising element gives you a lot of flexibility. While the braise should only take 4-5 hours, you can "hold" this meat in the hot liquid for hours until you are ready to eat. Leave in the underground oven for 14 -16 hours. When cooked, pull out the meat piece by piece and immediately add salt. 🇲🇽 MAGUEY WORM SALSA: On a grill, add diced onions, chilies, tomatoes, garlic and maguey worms to roast. Take onions and garlic and place in a volcanic stone mortar, then add tomatoes and maguey worms. Brought to you by: Ontario Creates RECIPE BEEF CHEEK ENCHILADAS Ingredients 2 (about 12oz) beef cheeks 3 tbsp canola oil 4 cloves garlic, smashed 1 onion, sliced into 6 wedges 1 poblano pepper 2 jalapeno peppers 1 Cubanelle pepper 1 (28 oz) can mild red enchilada sauce 1L beef stock 1 tbsp dry oregano 2 tsp salt 1 tsp pepper 1 10oz ball Oaxacan cheese, torn into 1 inch pieces 8-10 6inch flour tortillas Garnish Sour cream or Mexican Crema Crumbled cotija cheese Cilantro leaves Sliced green onion Shredded iceberg Lime DIRECTIONS 1. Remove silver skin from beef cheeks, and reserve scraps . 2. Heat oil in a large pot or dutch oven over medium-high. 3. Add in garlic and onion and cook until fragrant, about 3 minutes. 4. Add in the whole peppers and stir to coat with oil. 5. Pour in enchilada sauce and beef stock and stir. 6. Add in beef cheeks and scraps along with oregano, pepper and salt. 7. Bring mixture up to a boil then reduce to a low simmer. Cover with lid and cook until peppers are tender, about 1 hour. 8. Remove peppers from the pot and set aside. Cover pot and continue to cook until meat is fork tender, about another 1.5 hours. 9. Preheat oven to 375F. 10. Remove beef cheeks from the pot and set aside. 11. Increase heat to high and allow the residual liquid in the pot to reduce until thick and saucy, about 5 minutes. 12. Carefully remove skin from peppers and place the flesh of the peppers along with the onions in a bowl. Pull apart the beef cheeks and place in bowl with peppers. 13. Ladle about 1/2 cup of sauce into bowl and stir to combine. 14. Ladle enough sauce to coat the bottom of a baking dish. 15. Place a few spoonfuls of the meat and pepper filling into a tortilla and top with 2-3 pieces of the torn Queso Oaxaca. Roll up and place in baking dish. Repeat with remaining tortillas. 16. Ladle about 1 cup of sauce over the centre of the rolled tortillas cover with remaining cheese pieces. 17. Bake in oven until cheese is bubbling, about 20 minutes. 18. Serve enchiladas on a plate and top with sour cream, cotija, cilantro, sliced green onion, shredded iceberg and a squeeze of lime. 🤍 🤍 🤍 🤍
Let’s barbecue some BARBACOA Getcha Some APC BBQ Rubs Here: 🤍 Now, barbacoa translates basically to “barbecue” in English – so does that mean we’re gonna barbecue some barbecue? Not exactly, we’re gonna making BARBACOA de CABEZA aka a WHOLE COW’S HEAD. But wait, there’s more! In South Texas barbacoa pretty much means BEEF all the time…but in other places barbacoa can be beef, goat or lamb. Confused yet? Don’t worry… cuz this cooking process is SUPER easy. And yeah, yeah, yeah barbecue is all about tradition but sometimes…you don’t want to dig a hole in the ground to cook an entire cabeza just to enjoy some fresh, delicious and traditional barbacoa. That’s what’s traditionally called “en pozo” – in a hole in the ground – and that’s how my Dad and grandpa used to make it on the farm. Well I got my above ground pozo right here! My (brooks?) drum smoker. I’m gonna start by smoking this cabeza just a little bit (elaborate more here? What temp? How long?) and to finish it it we will transfer it to a roasting pan wrapped in foil with a bayleaf and cook it all night till it’s done (about how long? At what temp?). So why would you want to cook a WHOLE cabeza for barbacoa and not just grab a pound from the meat market? Well, first of all you get ALL of the lean lengua and all of the moist cachete meat which will let you blend a perfect bite of barbacoa in your tacos. Secondly, by cooking it in the drum instead of the oven or crock pot we get to put some smoky flavor on the cabeza which will make the experience all the better.. And lastly…come on! Just look at this WOW factor!! It’s just badass barbecue. Now let’s fire up this pozo and make some barbecue…I mean barbacoa!
