Oggi atterriamo in Campania e cuciniamo Pasta e Patate con Camilla Monteduro, Chef di Gambero Rosso e Fabiana Castiglione, Professoressa Associata in Gastroenterologia presso l’Università di Napoli “Federico II” – Gastroenterologia e Direttrice UOSD “Terapie avanzate delle Malattie Infiammatorie Croniche Intestinali”. Ingredienti: 500 gr di patate sbucciate 180 gr di pasta mista 1 cipolla 80 gr di carote 2 coste di sedano Olio di oliva extra vergine Alloro, rosmarino, basilico Buccia di parmigiano 80 gr di provola affumicata fresca 4-5 pomodorini ciliegino Procedimento: Tagliamo finemente sedano, carota e cipolla; puliamo le patate e tagliamole a tocchetti irregolari di circa 2 cm. A questo punto mettiamo sul fuoco una casseruola con un filo d’olio, aggiungiamo il trito di verdure e l'alloro con il rosmarino, lasciandoli scaldare a fuoco dolce per qualche minuto. Dopo qualche minuto uniamo le patate. Lasciamole insaporire mescolando di tanto in tanto evitando così che bruci il fondo. Aggiungiamo anche la crosta di formaggio (prima pulirla e grattare la parte esterna), uniamo anche il pomodorino e mescoliamo. Versiamo ora 600 grammi di acqua calda, aggiustando di sale. Infine copriamo con il coperchio lasciando cuocere a fuoco dolce per 30 minuti; al bisogno possiamo aggiungere ancora un po’ di acqua. Trascorso questo tempo, le patate risulteranno ammorbidite, schiacciamone una parte con il frullatore a immersione per ottenere una crema delicata; a questo punto versiamo la pasta mista nella pentola. Aggiungiamo subito altri 250 grammi di acqua calda e portiamo il tutto a bollore. Lasciamo cuocere la pasta mescolando di tanto in tanto: se dovesse servire possiamo aggiungere altra acqua al bisogno. A fine cottura aggiungiamo la provola affumicata a piccoli cubetti e integriamo con la crema di patate, così che il composto risulterà cremoso e quasi asciutto. Eliminiamo quindi i rametti di rosmarino e l'alloro e serviamo la nostra pasta e patate guarnendo con un giro di olio e le foglioline di basilico.
