Download our Mobile Application : 🤍 Ingredients Chicken – 1 kg Onion -3 nos Green chilli – 2 nos Tomatoes -2 nos Ginger -1 nos Garlic – 8 to 9 nos Curry leaves – 3 sprigs Grated coconut -1 cup Red chilli powder – 2 tbsp Coriander powder – 1 tbsp Turmeric powder – ½ tbsp. Cardamom- 2 nos Cinnamon – 1 nos Cloves- 2 nos Pepper seed – 1 tsp Fennel seed – 1 tsp Salt – 1 o2 tsp Oil – 2 or 3 tbsp Method Heat oil in a pan add cardamom, cinnamon, cloves, pepper seed and fennel seed saute them well. Add grated coconut and saute them well. Then add some redchilli powder , coriander powder and turmeric powder ,roasted them well and set aside. Grind the roasted coconut and other ingredients into fine paste and set aside. Again grind ginger and garlic into fine paste and set aside. Heat oil in a pan add fennel seed ,lets crackled . Add chopped onion saute for 2 to 3 minutes. Add grinded ginger garlic paste,green chilli and curry leaves saute them well. Add chopped tomatoes and salt saute them well. Cover and cook till the tomatoes become soften. Add grinded coconut masala and mix them well. Then pour some water into the masala bowl and add the water into curry pan. Add sufficient amount of water into the pan ,cover and boil them well. Add cleaned chicken pieces mix them well. Cover and cook till the chicken become soften . Remove from fire and set aside. Egg bajji Ingredients Egg - 5 nos Gram flour - 1 1/2 cup Rice flour - 1/2 cup Red chilli powder - 1 1/2 tsp Asafoetida - 1 tsp Salt - 1 tsp Method Heat water in a pan. Add salt and eggs, cover and boil them well. Drain the boiled eggs and put them in a bowl filled with cold water. Take a bowl and add grame flour, rice flour, salt and asafoetida powder. Add some red chilli powder and mix them well. Add some water and make it into a smooth batter. It should be a little thinner than dosa batter. but don't make it too thin. The peeled boiled eggs should then be cut in half and set aside.  Heat oil in a pan, dip the boiled egg in the batter, and coat well. Then, drop the boiled egg into the oil. Then we have to flip the eggs once the other side gets golden brown. Remove the fried eggs from the oil and set aside to drain excess oil.  Serve the egg bajji with tea or coffee. Banana bajji Ingredients Banana - 2 nos Gram flour - 1 1/2 cup Rice flour - 1/2 cup Red chilli powder - 1 1/2 tsp Asafoetida - 1 tsp Salt - 1 tsp Method Peel the banana and cut it in half. Potato bajji Ingredients Potato - 2 nos Gram flour - 1 1/2 cup Rice flour - 1/2 cup Red chilli powder - 1 1/2 tsp Asafoetida - 1 tsp Salt - 1 tsp Method Then peel the potatoes and set them aside. The peeled potatoes should then be cut into round, thin slices and set aside. Take a bowl and add grame flour, rice flour, salt and asafoetida powder. Add some red chilli powder and mix them well. Heat oil in a pan Then dip the potato slices into the batter and coat thoroughly. Then, drop the coated potato slices into the oil. Ingredients Mackerel fish - 1 kg Onion - 2 nos Shallots - 9 to 10 nos Green chilli - 3 to 4 nos Ginger - 1 nos Garlic - 7 to 8 nos Curry leaves - 2 to 3 sprigs Tomatoes - 2 nos Red chilli powder - 3 tsp Turmeric powder - 1 tsp Coriander powder - 1 tsp Pepper powder - 1 tsp salt - 1 or 2 tsp Oil - 7 to 8 nos Method First, we have to cut and clean the fish. Wash them well and set them aside. Take a pan add mackerel fish. Then add red chilli powder, pepper powder, turmeric powder and salt. Then add lemon juiceand mix them well. Marinated the fish for half an hour. Then chop the peeled onion and set it aside. Then chop the shallots and set aside. Then chop the green chilli and set it aside. Then chop the tomatoes and set them aside. Then crush the ginger and garlic into a fine paste and set aside. Heat oil in a pan and add marinated mackerel fish. Fry them well until they become golden brown. Drain the excess oil and set it aside. Heat oil in a pan and add chopped shallots. Sauté them well. for a few minutes. Add crushed ginger and garlic and sauté them well. Sprinkle with salt and sauté the onion until translucent.  Add curry leaves and green chillies and sauté them well. Now add the chopped tomatoes and sauté them well. Then add turmeric powder, red chilli powder, coriander powder, and salt. Cook until the raw flavour and smell are completely gone. Remove from the heat and set aside . Take one banana leaf and place it in the fire. Just heat the leaf and set it aside. Then place some masala mix on the banana leaf. Place one fried fish on top of that, along with some more masala. Fold the banana leaf and make a packet. Now tie it with a string. Heat a pan, sprinkle some coconut oil, and place the fish packets. Then cook both sides for 10 to 13 minutes on a low flame. Set aside after removing from the pan. Then remove the tie and open the tasty masala fish fry. Serve and enjoy the tasty mackerel fish fry with meals.

One of the dishes that is both popular, and always hits the spot is a Kerala style Kottayam fish curry. And so today we’re going to make it, together. We had Kottayam fish curry a number of times throughout Kerala, home cooked, in the jungle and homely restaurant, and at a legendary toddy shop, known for serving extra spicy Indian food. They were all extremely delicious. Ok, let’s get started on this recipe: Ingredients: ½ kg. King Mackerel 3 tbsp coconut oil 1 tbsp mustard seeds 1 tbsp fenugreek seeds 10 - 15 dried whole chilies 4 - 6 stems of curry leaves 50 grams ginger 1 head garlic 6 small shallots 20 grams dried pot tamarind - soak in 300 ml water for 15 minutes. 4 tbsp. Kashmiri chili 4 tbsp. Strong chili 2 tbsp. Coriander powder ½ tbsp. Turmeric powder ½ tbsp. Black pepper Salt to taste Method: Pound ginger and garlic into a coarse paste. Slice shallots. Set all dry spices aside on a plate so you can use them quickly. Soak dry pot tamarind in water and set aside for at least 15 minutes to extract the flavor. Begin cooking by heating coconut oil in pot. When hot, immediately toss in mustard seeds, fenugreek seeds, curry leaves, and whole dried chilies. Fry for a few seconds until smoky and fragrant. Add ginger garlic paste and shallots and stir fry until golden and fragrant. Add all dry spices, if it gets to dry add a little water, and make into a paste. Add pot tamarind water, and mix into spices. You can also add some extra water to make it liquid. Season with salt to taste. Taste test to balance spices, pot tamarind sourness, and salt. Add more if needed. Final step is to add the fish - and once you add it - don’t stir your curry. Make sure fish is submerged into curry sauce. Simmer to 5 - 10 minutes depending on how big your fish is. When fish is cooked, curry is ready. Eat with rice, or tubers. Drain and set aside. Take pot add cleaned toor dal,water and salt Then add some turmeric powder Cover and cook the Dal until evenly cooked and mushy. Then crush the shallots and set aside. Then grind ginger ,garlic and dry red chilli into smooth paste and set aside. Heat oil in a pan add mustard seed ,let it crackle Then add crush shallots and ginger ,dry red chilli mix,saute them well. Then add curry leaves ,tomatoes and salt , saute till they become soften. Then add cooked toor dal and water ,stir them well. Then add some salt and mix them well. Cook it on a high flame until the Dal gets curry like consistency. Remove from fire and set aside. Serve the tasty curry with chapati

Come along with me as I enjoy veg and non-veg Kerala food like seafood, duck, chicken, and liver at Vazhiyorakkada Restaurant in Kilimanoor, India, and visit Varkala Beach! After leaving the massive Jatayu sculpture in Chadayamangalam, my boy Vishnu and I continued at Vazhiyorakkada, a traditional Kerala restaurant in Kilimanoor. They make some of the most traditional cuisine in Kerala and sell mostly non-veg foods and lots of different types of curries. Everything is locally-made by a woman in the kitchen! We took a tour of the kitchen, where saw some papadum, dried fish, super hot chilies, onions, fish curry, parottas, squid thoran, prawn fry, a curry made from the head of a huge fish, and more. Everything looked phenomenal! I sampled a super buttery prawn that was covered in an incredible masala before we went out to the dining hall to eat! The restaurant has one big dining hall and family rooms on the other side. We ate in the dining hall and ordered their oonu, which is a meal served on a banana leaf. We had a bunch of different vegetable curries, rice, fish curry, liver, chicken curry, duck, and more. Everything looked unreal! I started with some buttery chicken liver and then went with the parippu, papadum, and rice. It was a delicious first bite! Then, I added a delicious, spicy prawn. I also loved the greenish gravy of the duck roast, which wasn’t spicy at all. I could taste the curry leaf and black pepper in it. Then, I went for the squid, which contained lots of amazing coconut flavor. I couldn’t get enough of it! The squid was soft and I could tell it was fresh and had never been frozen. Then, I took some of the fish gravy and mixed it into the rice, a bony but deliciously spicy chicken curry, a ginger pickle, and a smoky fish curry! I then drank some pachadi (pineapple, cheera, and beetroot) right out of my hand. It was spicy and sweet at the same time! Then, I tried a phenomenal quail egg, which was like the best hardboiled egg I’ve had in my life! Everything was so good because it was so fresh and came from the area. To finish up, I mixed the squid thoran, prawns, rice, coconut with chili, mixed it up, and dug in. It was the best thing ever! When you finish your meal, you always fold your banana leaf away from you, throw it away, and then wash your hands well. What an unreal veg and non-veg Kerala food meal at Vazhiyorakkada Restaurant in Kilimanoor, India! It was the grandest meal I’d had on my trip so far and one of my favorite meals ever in India. From there, we drove from Kilimanoor to Varkala. We passed by six or seven small towns along the main highway, which connects half of India! Finally, after going the wrong way for a while and getting stuck in a crazy traffic jam because of a passing train, we arrived at the Varkala Cliff Helipad. Right down a narrow alley between lots of houses was our Airbnb, the Palm Bay Beach Residences. It’s a big house with lots of different rooms and is located on the cliffs. I had a king-sized bed and a nice bathroom. They have an apartment and 12 rooms in total. Then grind everything under the grinding section to fine paste. Then in kadai mix everything together along with liver ,coconut oil and shallots . Ingredients Eggs - 5 nos Onion - 3 nos Green chilli - 2 to 3 nos Ginger - 1 nos Garlic 10 to 12 nos Curry leaves - 3 to 4 sprigs Tomatoes - 2 nos Red chilli powder - 1 1/2 tbsp Coriander powder - 1 tbsp Turmeric powder - 1/2 tbsp Fennel seed powder - 1 tbsp Mustard seed - 1 tsp Salt - 1 or 2 tbsp Oil - 3 to 4 tbsp Method Heat water in a pan, add salt and eggs. Boil them well. Drain boiled eggs and put in a bowl filled with cold water . Heat oil in a pan, add mustard seeds and let them sputter. Add crushed ginger and garlic,saute them well. Then add the chopped onion and green chilli,saute for a few minutes. Sprinkle with salt and saute till the onions become translucent. Then add curry leaves and saute them well. Then add some curry powders like turmeric powder, red chilli powder and coriander powder. Saute till the raw smell completely disappears. Then add the chopped tomatoes and saute them well.Cover and cook till the tomatoes become soft. Remove the lid and saute them well. Then add a sufficient amount of water and mix them well. Remove the lid and add some fennel seed powder. Saute them well. Then, combine peeled boiled eggs with the cooking masala mix. Cook for few minutes. Remove from fire and keep aside. Serve the tasty egg curry with appam or puttu.. Puttu recipe Ingredients Rice flour - 1 1/2 cup Carrot - 6 nos Sugar - 1/2 cup Grated coconut Salt - 1 or 2 tsp Method Peel the carrot and set it aside. Then we have to chop the carrot and set it aside. Take a pan,add chopped carrots and sugar,mix them well. Then add rice flour and mix them well. Sprinkle some salt and mix them well. Heat the vessel with water and allow water to simmer. Then we take a puttu steamer and layer with grated coconut Again we add rice flour carrot mix Then layer with grated coconut. Again we have to layer with carrot rice flour mix Finally we add grated coconut and level it up. Fill it till the top of the mould and cover with the lid. Place this mould on top of the simmering water bath. Steam passing through the lid hole shows that the puttu is cooked and ready. Then we detach the mould from the boiling water bath Then push the rice cake with a long stick on to a serving plate. Serve and enjoy the Puttu with egg curry.

Add marinated chicken pieces and sauté them well. Cover and cook till the chicken becomes soften. Remove the lid and pour in some water and mix them well. Cook for 8 to 9 minutes, covered. Ingredients Potato -3 nos Onion - - 2 nos Green chilli - 3 nos Tomatoes - 1 nos Curry leaves - 2 to 3 sprigs Ginger - 1 nos Garlic - 13 to 14 nos Turmeric powder - 1/2 tbsp Red chilli powder - 1 tbsp Coriander powder - 1 tbsp Garam masala - 1 tbsp Mustard seed - 1 tsp Salt - 1 or 2 tsp Oil - 3 to 4 tbsp Method Heat water in a pan. Add potatoes and salt mix them well. Cover and boil them well. Remove the cooked potato pan from the fire and set it aside. Then peel the boiled potatoes and set them aside. Then smashed the peeled potatoes with  fingers, set aside. Heat oil in a pan, add mustard seed, and let them sputter. Add curry leaves and chopped onion and saute them well. Then add the crushed ginger and garlic mix, Saute them well. Then add turmeric powder, red chilli powder and coriander powder. Saute them well till the raw smell completely disappears. Then add the chopped tomatoes and salt. Saute them well till the tomatoes become soft. Add the mashed potatoes and combine them well. Pour a sufficient amount of water over them and thoroughly mix them. cover and boil them well. Remove the lid and mix them well. Add some garam masala and mix them well. Cook for 5 to 6 minutes. Remove from fire and set aside.  Serve the tasty potato curry with chapati

Ingredients All purpose flour- 1 cup Onion - 4 nos Ginger - 1 nos Green chilli - 2 or 3 nos Red chilli powder - 1 tbsp Fennel seed - 1 tbsp Salt - 1 or 2 tsp Method First we have to chopped onion and set aside. Then chop the ginger and green chilli, keep it aside. Then wash and chopped the curry leaves,set aside. Then sprinkle some salt into the chopped onion pan  mix them well with hands,so that the water from the onions start to come out Then add all-purpose flour  and Combine them well with the onion  Then add chopped ginger,fennel seed ,curry leaves and green chilli  Then add red chilli powder and mix them well. This vada don’t need any additional water, the moisture in this onions is enough for making the batter. Heat oil in a pan . Make small balls out of this mixture and drop in hot oil Fry this till golden on a medium flame Now drain and set aside. Vendakka Mappas is a Kerala-style coconut milk-based Orka curry. It is a lightly spiced creamy side dish perfect for rice and Chapathi. Ingredients Banana - 4 nos Rice flour - 1 cup Grated coconut - 1 cup Salt - 1 or 2 tsp Method Heat water in a steamer and place the idli mould Then we have to steam banana for 10 to 12 minutes Remove the lid and check whether the skin of the banana is starting to split in places. Remove and peel the steamed banana and allow it to cool. Then just cut the banana into small pieces. Then we have to cut banana leaves into small pieces . Take a bowl, add rice flour, grinded banana puree and salt . Combine them well. Add water little by little ,mixing thoroughly, till they become  smooth dough. Then fill the dough into the idiyappam press and close the lid. Take a banana sheet and press the dough into a circle shape onto the banana leaves. Sprinkle some grated coconut on to the top of the dough . Again, press some dough on to the top and set aside. Then repeat the same process for the balance of the dough  Then they placed the idiyappam dough into the steamer one by one . cover and Cook for 8 to 10 minutes.
