Kerala Style Rice Payasam With Coconut Milk | Onam Special Rice Payasam Recipe | Onam Ep : 4


Ingredients Rice- 1 cup Jaggery (gur) – 1 cup ghee -1 ltr Raisin -1 tablespoon Cashew nuts – tablespoon coconut pieces- 3/4 cup cardamom powder 1 teaspoon Coconut milk – one full (first and second ) Dry ginger powder-1/4 Cumin powder 1\4 Pearl sago-1\2 cup Milk-1ltr Preparation In a pan, add the water and jaggery melt it over low flame. Crush the jaggery to make the melting faster and easier. Then filter the jaggery syrup and keep it aside. Grind the grated coconut and extract the first and second milk from it In a heavy bottom pan add ghee and jaggery syrup .now we add pearl sago mix them well And then we add rice and second coconut milk while stirring. Add small amount of cow milk , followed by the ghee and the powdered cardamom ,cumin powder and dry ginger powder with constant stirring in low flame. In a pan / Kadai / heat the ghee, fry raisins, coconut pieces and fry cashew nuts till it become golden colour. Add it to the payasam ,add the first milk and mix well. Do not allow it to over boil. Kerala Style Rice Payasam - Ari payasam


Ingredients Rice - 1 kg Jaggery - 1 cup Grated coconut - 2 cup Milk - 1 or 2 cup Cashew nut - 2 or 3 tbsp Raisins - 1 or 2 tbsp Bay leaves - 6 or 7 not Cardamom - 5 or 6 nos Dry ginger powder - 1 tbsp Cumin seed - 1 tbsp Ghee - 4 or 5 tbsp Method Heat water in a pan add jaggery and boil them well. Take a large bowl add grated coconut ,squeeze them well. Drain thick coconut milk and keep aside. Add some more water to the squeezed coconut mixture Mix well and drain thin coconut milk and set aside. Again, continuing the same draining method for coconut milk straining. Heat water in a pot Heat water in a pan ,add coconut pieces Sauce and fry till they become golden brown . Heat ghee in pan ,add coconut pieces Saute and fry them well. Then add cashew nut and sauce them well. Finally add some raisins and fry till they become golden brown. Drain and keep aside. Take a pan add rice and water . Wash them well and drain ,set aside. Heat a pan add drained rice and ghee,saute them well. Add third strained coconut milk ,stir and boil them well. Then drain jaggery water , Again add second thin coconut milk into the half cooked rice Stir and cook them well. Add drained jaggery water saute and boil them well. Add bay leaves and boil them well. Crush cardamom and set aside. Then stir the payasam very well. Add some amount of milk and boil them well. Then add dry ginger powder cumin powder and cardamom powder Combine them well. Add fried coconut pieces ,raisins and cashew nut ,stir them well. Pour thick coconut milk ,combine them well. Remove from fire and keep aside. Today we are going to make aravana payasam or nei payasam. This payasam is made while going on a pilgrimage to Sabarimalai. It is also served in Guruvaypor temples all over India as prasad. This payasam does not contain milk or coconut milk. So it will not get spoiled easily.  I know many of you might be wondering if red rice is a must.  Well, you can make this payasam with regular rice / khane ka chawal too. But the traditional recipe calls for red rice. So,if you can get red rice, make with it. If you can't then use regular raw rice / khaane ka chawal.  But do not use basmati rice.  We have taken 1.25 cups of red rice.  1 cup is 250 ml in our recipes. But you can use any cup or glass. Only make sure that you use the same cup throughout the recipe for measuring all ingredients be it rice or jaggery or ghee or water.  Ingredients: Red rice 1 heaping cup / 200:g jaggery 500 g 2.5 heaping cups ghee 1 cup sliced coconut 1 cup Dry ginger powder Wash the rice well and add it to a heavy-bottomed vessel.  Do not cook this rice in a pressure cooker as it will turn very sticky if you do.  Now I am adding 5 cups water to the rice. I am using the same measuring cup that I used for measuring rice. Cook on a high flame until one boil. Add 2 tbsp ghee Don't cook in a pressure cooker as it can turn sticky. Make sure that the rice is well cooked before you add the jaggery. Once the jaggery is added the rice will not get cooked any further. And not only does it not get cooked, but it will also harden. Keep the flame high up to 1 boil.  After 1 boil, lower the flame and cover and cook Add 3 cups of water to the jaggery. Heat the ⛽ Check the rice. If it is soft and cooked switch off the flame After the jaggery is melted add to the cooked rice Keep flame high now Add ginger powder When jaggery comes to a boil add 2 tbsp ghee Keep adding ghee in intervals Do not cover the payasam with a lid Keep stirring the payasam until it thickens Do not let the payasam turn too thick as it will turn thicker and drier after it cools down. Do not add cardamom powder Remember to add ghee in between Let it thicken until ghee forms a layer on top As it thickens, lower the flame Cook on a low flame for 10 minutes After 10 minutes,you will see ghee at the corners of the pan. Switch off the flame In 1/4 cup of ghee fry the sliced 🥥 coconuts Coconuts should be golden brown. Cook on low flame so that it is cooked from within Add fried coconut pieces to payasam. Today I'm sharing how to make Ari Payasam .This is made with unakalari & tastes really yummy Do try this out Ingredients Payasam rice/ Unakalari 1 cup Frist milk 1.5 cup Second milk 2 cup Third Milk 3 cup Jaggery 400 gms Cardamom powder 3/4 tsp Ghee 2 tbsp Coconut bits Raisins Cashews Salt 1 pinch Melt jaggery using 1 cup water Cook washed rice with third Milk untill it is well cooked To this add melted jaggery & boil for 10 minutes Add 2nd milk & boil for 5 to 6 minutes.Also add 1/2 tsp cardamom powder Fry coconut pieces,cashews & raisins in ghee & keep aside. Authentic Kerala Dishes with my personal Touch 😍 Ingredients Chana Dal-1cup Sabudana-1/4cup + 1/4cup -Coconut Milk Ghee-2 1/2tbsp Thin Coconut milk-5cups Thick Coconut Milk-1 1/2 cup Jaggery -400 to 500gm Cardamom Powder-1/4tsp Dry Ginger-1/4tsp Cashew nuts-10 Raisins-15 Coconut Pieces-few Hot Water-3ups Method Wash chana dal well ,drain and keep aside for 30 minutes .. Then heat ghee in a cooker and add chana dal and fry for 5-10 minutes in medium flame . Now add 3 cups of water and cook . Keep aside . In a thick bottomed kadai , roast cashews,raisins and coconut separately in ghee.. In the same ghee add some more ghee and heat. To that add cooked chana dal and stir for 10 minutes. Then add jaggery syrup and mix well .. Allow to cook for 10 minutes . Now add 5cups of coconut milk and mix well.. Cook till the milk turn thick.. Now add cooked sabudana and salt .. When the payasam is thick enough add thick coconut milk and milk.. After adding the final milk dont boil ,just heat.. Check the taste and add jaggery syrup if needed .. Now add roasted items along with dry ginger powder and cardamom powder .. Close the kadai for 10 minutes ..Then serve

Kerala Style Semiya Sarkara Payasam | Vermicelli Jaggery Kheer


Ingredients Vermicelli – 2 cup Greated coconut – 1 ½ cup Jaggary – 1 cup Cardamom -= 3 nos Cashew nut – 250 grm Raisins -2 or 3 tsp Water – 2 or 3cups Method Firstly we haveto takea pan add grated coconut and squeeze them well with neat hands ,then drain the thick coconut milk and set aside. Again we have to continuing this same process by adding some water into the squeezed grated coconut pan and squeeze them well, drain thin coconut milk and keep aside . Heat water in a pan add grated jaggery and boil them well.keepaside. Then crush cardamom and keep aside. Heat ghee in a pan add cashew nut and raisins ,fried them well and set aside. Heat ghee in a heavy bottom pan add vermicelli ,roasted for some minutes. Then pour accurate quantity of water and cook them well. Add filtered jaggery water into the pan and boil them well. Add thin coconut milk and mix them welland boil them well. Then add crushed cardamom powder and thick coconut milk mix them well. Remove from fire and keep aside. Add fried cashew nut and raisins . Ada Pradhaman | Onam Sadhya Payasam | Kerala Style


Ingredients Banana leaf. Rice powder- 1 kg. Ghee. Jaggery – 1/2 kg. Grated coconut – of 3 nos. Sago – 1/4 of a small glass. Cardomom – 8 nos. Dried ginger powder – 1 tablespoon. Cashew. Raisin. Cumin – 2 teaspoon. Method 1)Heat a saucepan, on medium heat, add jaggery to 1 and 1/2 liter of water, heat till the jaggery dissolves, once it is well dissolved, turn off the flame. Pass the jaggery syrup through a strainer and set aside. 2)Mix rice powder, ghee, water to make a batter similar to that of dosa. 3)Pour the prepared batter on cut banana leaf and roll and tie it with strings. Keep it on a steamer and let it cook. Keep the cooked ada aside. 4)Extract 2 types of coconut milk, thick and thin. 5)In a urili, heat the jaggery syrup. Remove the cooked ada from banana leaf and drop it to the syrup. Add cooked sago. 6)To the urili, add think coconut milk, cardamom powder, and dried ginger powder. 7)Heat a pan with ghee on low flame add the cashews, coconut, and raisins till they are golden. Turn off the flame and set aside. 8)Add milk to urili and cook. 9)Crush the cumin and mix it to the payasam. Add fried cashew and raisin. Mix in the thick coconut milk. 10) Remove the urili from flame. Transfer the payasam to the desired plate. It's a traditional payasam which is smooth and silky in texture. It has only 3 ingredients milk, sugar and ada, which is made of rice batter. Method Milk -3 litres Ada - 400 gms Sugar - 1 cup + 4 tbsp Add 2 litres of milk to a pressure cooker and add 4 tbsp of sugar. Boil the milk and let the sugar melt. Close the lid of the pressure cooker and let it cook on low for 1 and half hours. Meanwhile clean the ada and cook it in 1 litre of milk plus half cup water. It will take 15-20 mins to cook. Don't add sugar until ada is cooked. Add the cooked milk to the cooked add and let it cook together for another 15-20 mins. When it is 80% done add sugar. Add 1 to 1 and half cups depending on your taste. Turn off the flame a few mins before it reach the desired consistency. After half an hour the payasam will get to the right consistency.
