In this video, I am showing how to make Spam Musubi, Teriyaki flavored Spam meat over pressed rice. This is not popular in the mainland Japan, but well know in the southern islands, Okinawa. This was actually invented in Hawaii by the Japanese immigrants and has been reverse-imported to Japan. This is also possible to be made with Tofu or Tempeh, if you are a vegetarian/vegan. In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan. This nondescript brown building in Bremerton hides a secret. A secret that inspires people to line up before 9 in the morning. A secret that says 'Aloha'. With each slab of Spam. "So a musubi traditionally is Spam on rice wrapped in seaweed - we grew up eating it in Hawaii,” said Café Kai co-owner Jamie Cancel. Musubi is a mashup of Japanese and American food - rice and Spam, bound by seaweed. And musubi (and espresso, because it's the Pacific Northwest) is all Cafe Kai makes. In fact, a sign on the door proudly proclaims No Muffins, No Scones, No Croissants, No Sandwiches, Aloha! Jamie owns Café Kai with her husband, Brandon Sumailo. It’s named after one of their daughters. At first, they tried to do paninis, but their hearts weren't in it. They're both from Oahu, so they started making the snack that tastes like home to all Hawaiians. "It’s definitely comforting food, sometimes it's a quick snack, sometimes it's a whole meal. We cook ours in our own teriyaki sauce,” she explained, “the texture if your rice is key, it has to be the perfect chewiness.” Another key to perfect musubi - that shiny, plastic wrapping. It's gotta be portable. “So that's Brandon's thing, he's the master wrapper,” said Jamie. Along with classic Spam teriyaki, they do vegan musubi with kimchi, one with bright red Redondo's Hot Dogs from Oahu, and rice balls that are pork-free. Their best seller? A Spam bacon avocado musubi. This handmade musubi inspires a line-up for every morning. An ambulance pulled up when we were shooting there, it seems to be the snack that keeps Bremerton's emergency services providers going strong. "We come here every shift, every shift at 9 o clock, if we're not running a call, we get our musubi. It's really good,” said Caleb Johnston, an EMT. And if you're still one of those people who says ‘no way’ to the notion of Spam and rice wrapped in seaweed, that's okay. To the owners of Cafe Kai, you're another potential convert. "So we try to be nice,” Jamie laughed. “We just tell them, it's nothing what you'd expect, it’s full of flavor, it's filling, it’s delicious. It’s satisfying. Whenever anyone tries it, they end up loving it.” Café Kai | 2518 Wheaton Way, Bremerton, WA 98310 Evening on KING 5 celebrates the Northwest. There's more than one way to enjoy this Hawaiian snack favorite! Ingredients: 1 can Spam, sliced 3 cups cooked short grain rice Nori sheets 2 tbsp soy sauce 2 tbsp sugar Steps: Mix soy sauce and sugar in a small bowl and set aside. Use kitchen scissors to cut nori sheets into thirds lengthwise. Pan fry Spam slices, until lightly browned. Pour sauce over the slices, flip occasionally, and cook until caramelized. Set aside to cool. Line Spam can with plastic wrap as a mold. Place some rice inside and press a Spam slice on top. Remove from mold and wrap with nori strip. SPAM, EGG, AND CHEESE MUSUBI: Follow standard musubi steps, but add ketchup, cooked scrambled eggs, sliced cheese, Spam, and more rice. Wrap with nori. KIMCHI MUSUBI: In a pan, stir fry chopped kimchi, kimchi juice, gochujang, cooked rice, sesame oil, scallions, and sesame seeds. Follow standard musubi instructions, also adding cucumber between the rice and Spam. FRIED MUSUBI: Make standard musubi, but divide rice per musubi to sandwich the spam. Make spicy mayo by combining sriracha and mayo. Prep dredging bowls, one each for flour, egg, and panko breadcrumbs. Dip musubi in flour, then egg, and then panko. Fry on all sides until golden. Drain excess oil, slice in half, and top with spicy mayo and scallions.
