Thank you! 💖MY VLOG CHANNEL 🤍 📸FOLLOW ME ON INSTAGRAM 👉🏼🤍 AND HASH TAG Simply Mama Cooks CHICKEN TAMALES RECIPE 🤍 MY FIRST TAMALES RECIPE VIDEO 🤍 INGREDIENTS 3 1/2 cups (410 g) instant corn flour 🤍 1/2 cup (60 g) corn starch 1 tsp baking powder 1 tsp salt 1 1/2 cups (300 g) granulated sugar 3 sticks (341 g) unsalted butter (softened) 2 cups (473 ml) pineapple juice 1 cinnamon stick 2 tsp vanilla extract 20 oz (566 g) can of crushed pineapple 40 corn husks (cleaned and presoaked) 🤍 16 qt STEAMER POT 🤍 INSTRUCTIONS - In a small sauce pan add pineapple juice and cinnamon stick, bring to a boil, remove from heat and steep for 10 minutes - In a large bowl combine instant corn four, salt, baking powder, sugar and combine well - Next add softened butter and combine well until masa dough is crumbly - Now add crushed pineapple, vanilla extract and mix well - Little by little add at least 1 3/4 cups of steeped pineapple juice - Mix masa dough vigorously for 2 to 3 minutes - Cover and allow to set for 20 to 30 minutes ASSEMBLY - Take pliable corn husk, add 3 to 4 Tbsp of masa dough to the center of the corn husk leaving at least one and a half inch from the top - Next fold over to enclose then fold bottom tip under to secure - Repeat this process until all tamales are assembled - In a 12 to 16 quart steamer pot add 2 to 2 1/2 liters of water, place the steamer basket/insert and start to stack your tamales open side up in a teepee pattern NOTE: Be sure water does not touch the tamales -Now add extra corn husks and cloth to cover the tamales - Cover with pot lid and bring water to a hard boil - Lower the heat to a medium to medium high heat then start 1 hour cook time - Cook time will vary so once a tamal can be removed easily from the husk, then tamales are done - Remove all tamales from pot, allow to set for 20 minutes, then serve This recipe can yield at least 35 tamales DISCLAIMER: This video and description contains affiliate links, which means that if you click on one of the product links, I’ll receive a small commission. Slice the ripe pineapple in half and scoop out the inside meat, leaving the shell intact to use as the final serving bowl 2. Remove the pineapple core (use in smoothies!) and chop the meat into bite sized pieces preserving as much juice as possible 3. Broil the pineapple bowls in the oven for 3-4mins (bowl side up) 4. Chop the extra firm tofu into small cubes. Finely chop the red onion, garlic, and ginger 5. Heat up a nonstick pan to medium heat. Add the peanuts and toast for 2-3mins, then set aside 6. Heat the pan back to medium heat and add the chili oil followed by the red onions. Sauté for 3-4mins 7. Add the garlic, ginger, and tofu. Sauté for 2-3mins. Then, add the cooked rice, pineapple pieces, curry powder, soy sauce, dark soy sauce, toasted sesame oil, about 2 tbsp of juice from the pineapple, and cayenne pepper. Sauté for another 3-4mins 8. Add the toasted peanuts and give the pan a good mix. Sweet and tangy raita prepared with pineapple and hung curd make a delicious side assortment with any dish. Ingredients Hung curd - 500 grams Chopped pineapple - 1/2 cup (100 grams) Pineapple paste - 1/2 cup (100 grams) Sugar - 1/4 cup (50 grams) Green coriander - 2 tbsp (finely chopped) Roasted cumin powder - 1/2 tsp Salt - 1/3 tsp or to taste Directions Making: 1.Start with cooking the pineapple paste in a pan. After a while, add sugar and chopped pineapple to the paste and mix everything really well. Sauté the pineapple until the rawness finishes off. 2.Then turn off the flame and transfer the roasted pineapple to a plate. Once the pineapple cools down completely, add it in the curd along with salt, green coriander and mix everything really well. Serving: 3.Garnish this super delectable pineapple raita with some cumin powder and serve as side assortment with your meals and relish eating. The Cheesecake Factory may have stopped selling its Pineapple Upside-Down Cheesecake, but that doesn't mean you can't make it at home yourself. Get the full recipe here: 🤍 INGREDIENTS FOR THE TOPPING Cooking spray, for pan 1/4 c. unsalted butter 1/2 c. packed brown sugar 1 20-oz. can pineapple rings in juice stemless maraschino cherries FOR THE CAKE 1 box yellow cake mic 1/3 c. oil 1 c. pineapple juice 3 eggs FOR THE CHEESECAKE 3 8-oz. packages cream cheese, softened 1 c. sugar 3 large eggs 1/4 c. sour cream 2 tsp. vanilla extract 1/2 tsp. kosher salt DIRECTIONS 1. Preheat oven to 350° and grease a 8” springform pan with cooking spray. In a 8” cake pan, melt butter in the oven. Add brown sugar to the bottom of the round cake pan. Spread mixture to the edges, then add 5 pineapple rings. Place cherries inside and in between pineapple slices. 2. Make cake: In a large bowl, combine cake mix, oil, pineapple juice and eggs. Whisk until smooth, then pour about half of the mixture over the pineapples in the regular cake pan. Pour the remaining half into the springform pan. Bake until the cakes are starting to turn golden and a toothpick inserted into the centers comes out clean, about 20 minutes. Let cool. 3. Meanwhile, make cheesecake layer. In a large bowl, beat cream cheese with a hand mixer until light and fluffy. Add sugar and beat until smooth. Add eggs one at a time, beating between each addition. Add sour cream, vanilla and salt and mix until smooth. Pour cheesecake layer over the baked cake in the springform pan. Wrap the bottom of the springform pan in foil. Pour cream cheese batter onto cooled cake and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 10 minutes. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan. Bake as directed.) 4. If not using a water bath: Remove pan from oven and run a knife around the inside of the pan to release the cheesecake. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight. 5. Place cheesecake on a serving plate and top with pineapple upside down cake. Fireball Pineapple - Pineapple Soaked in Fireball Whiskey, Rubbed with Sugars and Grilled on Rotisserie For more barbecue and grilling recipes visit: 🤍 Fireball Pineapple Recipe For this grilled pineapple recipe, you will need these Ingredients: - 2 whole pineapples - 12oz Fireball Whiskey - 1 cup Raw Sugar - 1 cup Brown Sugar - 1 teaspoon Ground Cinnamon First you peel the pineapple and score the outside in a diamond pattern. Then place both pineapples in a ziplock storage bag and pour in the Fireball Whiskey. Close the bag and squeeze as much air out as possible. Marinate for at least 2 hours in the refrigerator. Turning half way through. You can use any grill to cook these pineapples, but you do ned to be setup for rotisserie cooking. For this cook, I used a propane grill set the two outside burners to medium high and the rotisserie burner for medium. Temperature should be about 450⁰. Next I get combine the raw sugar, brown sugar, and cinnamon in a bowl. Go ahead and skewer each pineapple with the rotisserie rod and secure with rotisserie forks. Apply the sugar mixture to the outside of each pineapple and place the rotisserie rod into the motor on the grill. Cook for approximately 25-30 minutes and apply more sugar mixture once the outside looks dry. Remove the pineapples once the outside is caramelized about 45-60 minutes total cook time. Carefully slide the pineapples off the skewer and slice into individual pieces for serving. These fireball pineapples are delicious and make for one awesome presentation to serve along with your BBQ. Written Recipe for Pineapple Sheera Ingredients: • Pineapple slices 300 gm • Salt a pinch • Sugar a large pinch • Lemon juice few drops • Ghee (amount of ghee used is given in method section) • Cashews 8-10 nos. (halved) • Almonds 8-10 nos. (chopped) • Pistachios 8-10 nos. (chopped) • Semolina (suji/rava) 1 cup • Water 3.25 cups (3 cups + 1/4th cup) • Kesar (saffron) 10-12 strands • Elaichi powder (Green Cardamom powder) 1 tsp • Sugar 3/4th cup Methods: • Take a coin size cookie cutter or a bottle lid and core out the pineapple slices. • Coat the pineapple slices with salt, a large pinch of sugar and lemon juice. • Set a grill pan or a normal pan on medium high heat, add the coated pineapple slices and grill on both the sides until grill marks appear and the pineapple caramelize, the grilling and the caramelization process deepens the flavour of the pineapple. • Transfer the grilled caramelized pineapple on a chopping board and roughly chop them while keeping them chunky, keep aside until used for making sheera. • Set a wok on low heat, add 2 tbsp ghee and chopped nuts in the wok, fry the nuts until light golden brown in colour. Keep aside until used for making sheera. • In the same pan add some more ghee about 1-2 tbsp, and semolina and roast it on medium low flame, until aromatic and light golden brown in colour. Remove it on a plate and keep aside. • Set another wok on medium heat, add water, kesar, cardamom powder and caramelized pineapple chunks, mix well and bring to a boil. • Add the roasted semolina in one stream and make sure to stir continuously while adding roasted semolina to avoid lump formation, keep stirring and cook for 4-5 minutes on medium high flame. • Add 3/4th cup sugar and stir until the sugar dissolves completely. • Once sugar dissolves, add 1/4th cup of ghee Add some ghee in two batches, stir and cook until the sheera leaves the pan and the ghee has separated. • Add the roasted nuts and mix well. Your pineapple sheera is ready, serve hot and garnish it with some chopped or slivered nuts. • I haven’t used raisins in the making of sheera, but if you prefer you can definitely go for it and tweak the addition of nuts as per your preference. Hey friends! My Fresh Homemade Mango Pineapple Lemonade is the perfect summer drink! 🤍 This recipe is full of fresh fruit, and it is so easy. No artificial flavors here! Freshly-squeezed lemons are the key to a delicious lemonade. Don’t go using no store-bought lemonade. Stick to the recipe, y’all! Start by cutting up pineapple and mango into chunks. I left the skin on, but some people may have an allergic reaction to mango skin. To be safe, wash the mangos, and peel the skin. Puree the fruit in a food processor or blender. Place the pureed fruit in a pot with sugar and water. Cook for about 10 minutes, or while you’re juicing the lemons. Add the freshly-squeezed lemon juice to the pot, and turn off the heat. Once it’s cooled completely, strain the juice into an ice-filled pitcher. Get yourself a glass full of lemonade, sit on the porch and enjoy the summer day! The problem with most (if not all) How to make vinegar recipe tutorials on Youtube is that they don't do it right. They miss the point that the bacteria that makes vinegar needs alcohol, oxygen, and a relatively sugar free environment. But the yeast that makes the alcohol needs a high sugar low oxygen environment... Our Apple Cider Vinegar Recipe: 🤍 So you first have to allow the yeast to ferment the sugar into alcohol with an airlock so that an anaerobic environment can form. Once the yeast has converted the sugar to alcohol (3-7 days) you can add the vinegar mother (bacteria) and start the aerobic conversion of alcohol to acetic acid. The method everyone else shows you - makes 'vinegar' but a very low quality vinegar that doesn't taste as good as it should. Nor will it have the good qualities that everyone is looking for. This is a method that you could use to make any - ANY - fruit based vinegar. You could sub in apple for Apple Cider Vinegar (ACV), orange, peach, grape, grapefruit, etc, etc… You could even use fruit scraps left over from other baking or cooking projects. It's simple if you do it right - you get the idea. Ingredients: 250g raw cane sugar (like jaggery) 1 Pineapple (about 2Kg) 500 mL distilled or spring water 15 mL beer, wine, or champagne yeast 30 mL raw vinegar or vinegar mother You could use 2Kg of ANY fruit* Method: Place the jaggery in the blender. Cut off the outer skin of the pineapple, no ned to be perfect. Rough chop the pineapple and place in the blender. Pureé the ingredients and then add the water. Pour the mixture into a clean / sanitised jar with a lid and airlock. Leave on the kitchen counter at room temp for 5-7 days, while the yeast converts the sugar to alcohol. Remove the airlock and - if desired - strain out the solids and transfer to a clean wide mouth container. Stir in the raw vinegar or mother, cover with cheesecloth and leave on the counter for another 5-6 weeks (or longer if you want). Strain out the ‘mother’ that has developed and use it for your next batch. Use this in our Curtido recipe: 🤍 Tips: - Yeast sediment from the first batch can be poured into the next to start the alcohol fermentation. - The mother will develop over multiple acetic fermentations and can be used almost endlessly if cared for. Preheat oven to 350F (175C). Grease a 9-inch (23cm) springform pan. 2. Make the caramel layer: In a small bowl stir melted butter and brown sugar. Transfer to the prepared pan and spread evenly. Arrange the pineapple slices over the caramel, and the cherries in the center of the rings and in between the rings. Set aside. 3. Make the cake: in a large bowl, cream butter and sugar. Add eggs, vanilla extract and beat until combined. Add pineapple juice (reserved from the can) and whisk until combined. 4. Sift in flour, baking powder and salt. Stir until incorporated. 5. Pour the batter over the pineapple layer and spread evenly. 6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. 7. Turn out onto serving platter. Pineapple Cream Dessert Serves 6-8 Recipe in English: Ingredients: -Cream chilled 200 ml -Cream cheese 1 & ½ Cups -Caster sugar ½ Cup or to taste -Pineapple small cubes 1 & ½ Cups -Biscuits 200 gms -Cheeni (Sugar) powdered 2-3 tbs -Makhan (Butter) melted ¾ Cup -Pineapple slices -Fresh coconut grated -Cherry Directions: -In bowl,add cream and beat until fluffy & set aside. -In bowl,add cream cheese,caster sugar and beat until sugar is dissolved. -Now add whipped cream and beat until well combined. -Add pineapples cubes,gently fold to combine & set aside. -In chopper,add biscuits,sugar and chop until crumbled. -During chopping,add butter and grind well. Assembling: -In serving glass or dish,add crumbled mixture and press firmly down into the base to create an even layer. -Add cream & pineapple filling and spread it. -Add pineapple slices and cream & pineapple filling. -Sprinkle fresh coconut and top with cherry. -Refrigerate for 4 hours & serve chilled.
