To a bowl, add curd, ginger garlic paste, turmeric powder, Kashmiri red chili powder, regular chili powder, garam masala powder, salt, cumin powder, coriander powder, black pepper powder, lemon juice and food colour. Mix everything well. 2. Pour the prepared marinade over the chicken, mix well and let the chicken marinate for about 1 hour. 3. Wash the rice and soak it in water for 1 hour. 4. Pour water in a pot and boil it. Add the soaked basmati rice along with the whole spices (Cinnamon, Cloves, Cardamom, Shahi Jeera, Peppercorns, MACE, Bay Leaf ). 5. Add salt and ghee to the pot. Cook the rice until it is 95 percent done. Strain the cooked rice and keep it aside. 6. Take ghee and oil in a pan. Add whole spices (Cinnamon, Cloves, Cardamom) and add onions, green chilies and saute for about 4 mins. 7. Add tomatoes and saute for 5 mins. Remove the mixture from the pan and cool it. 8. Take oil in a pan and cook the marinated chicken for 10 mins in it. Keep the chicken pieces aside. 9. To the leftover chicken gravy, add the onion and tomato mixture, mix well and cook for 5 mins. 10. Add the fried onions, coriander and mint leaves. Mix well and add the cooked chicken pieces. Add fried onions again. 11. Close the pan and cook for 10 mins on a low flame. Turn off the stove after 10 mins. 12. For layering the biryani, spread a layer of basmati rice in the bottom of a deep pot. 13. On this, spread a layer of the cooked chicken Tikka. 14. Add some fried onions, chopped coriander leaves and mint leaves. 15. Spread another layer of rice on this and gently press it down. Place fried onions, coriander leaves and mint leaves over it. 16. Lastly spread another layer of chicken, fried onions, coriander leaves and mint leaves. 17. Cover the pot with a silver foil and place it on a heated tawa. 18. Cook the biryani for 15 mins on Dum and turn off the stove. Let it rest for 5 mins and then open the foil. 19. Flavourful Chicken Tikka Biryani is ready to be served. SPECIAL CHICKEN 65 BIRYANI Ingredients: Chicken Boneless - 500 g Basmathi Rice(Soaked) - 3 cups Ginger garlic paste - 2 tb spn Coriander powder - 2 tsp Cumin powder - 2 tsp Garam masala - 2 tsp Yogurt - ½ cup Egg white - 1 tb spn Green chillies(chopped) - 1 tsp Lime Juice - 2 tsp Kashmiri chilli powder - 1 tsp Maida - 1 tsp Corn flour - 1 tsp Chilli Sauce - 1 tsp Whole garam masala - 1 tb spn Mint - 1 bunch Shahi jeera - 1 tsp Chicken stock - 1 litre Brown onion - 1 cup Salt - To Taste Oil - As Required Water - As Required Method: Firstly take chicken in a bowl add ginger garlic paste,coriander powder,garam masala powder,cumin powder,yogurt,egg white,green chillies,lime juice,kashmiri red chilli powder and mix it well. Now add corn flour,maida,chilli sauce and mix it again. Marinate this chicken overnight. Then deep fry the chicken in hot oil till it turns into nice colour and keep it aside Biryani Preparation: Take a biryani vessel in it add oil,whole garam masala,ginger garlic paste,shahi jeera,chilli powder,cumin powder,garam masala,coriander powder and saute it for a minute. Now add some yogurt,mint,green chillies,salt and chicken stock. Cook it till reduces into half of the quantity. After it reduces take some gravy out for making Egg salan. For preparing rice take a large cooking pot and boil water in it. Once it comes to a nice boil add oil,salt and add basmathi rice to it and cook it till its 70% done. Now strain the water and add rice into the chicken stock gravy, while layering add brown onions and mint leaves. Top it up with brown onions,coriander leaves,lime juice and saffron water and ghee. Cook it for 5-7 minutes closed on a low flame and switch off the flame. Egg Saalan Ingredients: Egg Boiled - 3 Cumin seeds - 1 tsp Mustard seeds - 1 tsp Onions - ¼ cup Ginger garlic paste - 1 tsp Turmeric - ½ tsp Chilli powder - 1 tsp Cumin powder - 1 tsp Garam masala - 1 tsp Coriander powder - 1 tsp Peanut+Sesame Seeds+Coconut(powder) - 1 cup Banana Pepper - 3 Yogurt - 1 cup Salt - To taste Oil - As Required Water - As Required Method: First heat some oil in a pan add cumin seeds,mustard seeds,onions,ginger garlic paste,turmeric,chilli powder,cumin powder,coriander powder and saute it for a minute. Then add the powder of coconut,sesame seed,peanuts of equal quantities and mix it well. Now add yogurt, chillies and stock removed from the biryani. Cook it for 5 more minutes add boiled eggs and switch off the flame. Golkonda Biryani | Eid Special Biryani Recipe | Hyderabadi Biryani Recipe | Golkonda Mutton Biryani | Hyderabadi Mutton Biryani | Mutton Biryani Recipe | Hyderabadi Mutton Biryani Recipe | Biryani Recipe Ingredients for Golconda Mutton Biryani: (Tsp- Teaspoon; Tbsp- Tablespoon ) - Mutton - 1 kg (curry cut with bones and fat) For Cooking Mutton: - Shah Jeera- 1 tsp - Green Cardamoms—3 - Cloves-4 - Cinnamon- 2 - Black Cardamom-2 - Onions, sliced- 3 medium ( 225-250 gms) - Ginger Garlic paste- 2.5 tbsp - Turmeric Powder- 3/4 tsp - Red Chilli powder- 2.5 tsp - Garam Masala Powder- 1 tsp - Green Cardamom (Elaichi) Powder- 1 tsp - Salt-2 tsp - Green Chillies, cut into 1/2 inch pieces- 5-6 whole Chillies - Whisked Curd/Plain yogurt- 250 gms - Refined Groundnut oil- 5 tbsp - Ghee- 1 tbsp - Water- 250 ml For cooking Basmati rice: - Basmati Rice-750 gms - Shahjeera (caraway seeds) - 1/2 tsp - Green cardamom - 4-5 - Cloves - 4-5 - Cinnamon- 3 pieces - Salt- 2 1/2 tablespoon - Water to boil the rice- around 2.5 litres - Ghee- 1 tbsp For Layering Biryani : - Coriander leaves, chopped- 5-6 tbsp - Mint leaves- 5-6 tbsp - Few Saffron strands soaked in 1/2 cup warm milk - Onions, sliced fine & fried crisp (birista) -2 medium ( 150 gms) - Ghee- 3 tsp Preparation : - Clean & wash the mutton. Allow the water to drain - Slice 3 medium onions (around 225 gms and set aside for use later.) - Make a powder of the green cardamoms to give 1 tsp powder. - Cut the green chillies into 1/2 inch pieces. - Whisk the curd/plain yogurt and set aside. - Soak few strands of saffron in 1/2 cup warm milk. - Wash & soak the Basmati Rice for 30 mins (just prior to cooking the rice) - Also slice 2 medium onions (around 150 gms) and fry in oil till golden (birista). Remove and set aside. Process: Cooking the Mutton: - Heat oil & ghee in a pan. - Add the Shahjeera, garam masalas and black cardamoms one after another and give a stir. - Add the sliced onions and fry on medium high heat for around 12 mins till golden. - Add the mutton pieces and the ginger garlic paste, give a mix and fry on high heat for 4-5 mins till the mutton pieces have turned white and the raw smell of the ginger garlic paste is gone. - Now add all the spice powders and salt and fry on medium heat for 3-4 mins till browned. - Now reduce heat to low or switch off heat and add the whisked curd/yogurt & chopped green Chillies. - Mix and cook on low heat for 7-8 mins till oil separates. - Now cover & cook on low heat for 12 mins. - Give a stir, add 250 ml water & cook on low heat for another 30-40 mins till meat is tender and water has dried up. - Dry up any excess water to get a thick gravy. Cooking the Basmati Rice: - Take a wide cooking pot & add around 2.5 litres of water to cook the rice . Place it on high heat. - You may include the water in which rice was soaked in this 2.5 litres for enhanced flavour & taste. - While the water is coming to a boil, add Shah Jeera - 1/2 tsp, Green cardamom - 3, Cloves - 3, Cinnamon- 2 pieces, Salt- 2 1/2 tablespoon ( two and half tablespoon) - Stir it well to dissolve the salt completely . The water must be very salty. - Add 1 tbsp of ghee. - Once the water is boiling add the strained basmati rice & stir it well. - Continue to boil it on high heat, stirring few times very gently to not break the rice. Switch off exactly in 6 mins and start scooping the rice with a slatted ladle. Layering the Biryani: - Take a 2nd heavy bottomed pan and grease the base with melted ghee. - Spread half of the cooked rice on the bottom of the pan. - Now spread the cooked mutton evenly on top along with the gravy. - Spread half the birista, all of the chopped coriander leaves & the mint leaves on this. - Layer out the rest of the rice on top of the cooked mutton. - Now add 3 tbsp ghee top and sprinkle the saffron milk. This classic Chicken Biryani recipe by vahchef is easy to follow Loved by all food lovers across the world, Choose from many types of briyani this is kind of restaurant style of preperation of birtani they do dum process they cook chicken together with same masalas which we use for biryani and rice will be cooked saperatly if the ordre comes they mix rice and chicken togeather and serve because the same rice can also used for vegetarins. 🤍 Ingredients: Chicken 1500 g Basmati rice 500g Bay leaf 3 n Star anise 3 n Cinnamon sticks 2 n Cloves 4 n Cardamom 6 n Shahi jeera 1 ts Lichen (kalpasi) 1ts Pepper corn 6 n Mace 2 n Golden fried onions 150 g Red chilly powder 2 tb Coriander powder 1 tb Cumin powder 1 ts Ginger garlic paste 1 tbs Salt Turmeric Yogurt 1 cup Coriander chopped 1 b Mint chopped 1 b Green chilly 5 n Oil ½ cup Lime juice 2tb Directions: First make a powder of all the spices, Take a bowl add chicken pieces and add made masala, chilly powder, ginger garlic paste, turmeric, salt, coriander powder, curd, chopped mint leaves, coriander leaves, fried onions, green chilly, lime juice, oil, and mix it well, and put it in the refrigerator over night, Heat water in a vessel and let it come to a boil add oil, salt, Shahi jeera, bay leaf and add basmati rice (soak the rice 1 hour) cook the rice till 70 %, add layer of chicken marinate and then this layer of rice. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid. Try this once and you may not miss the meat in your biryani. #HappyCookingToYou #FoodFusion Written Recipe: 🤍 Winter Special Sabzi Biryani Serves 5-6 Recipe in English: Ingredients: -Guar ki phalli (Cluster beans) 250g -Cooking oil ½ Cup -Aalo (Potatoes) peeled & cubes 3 medium -Gajar (Carrots) batonnet cut 1 Cup -Matar (Peas) 1 Cup -Dahi (Yogurt) whisked 1 Cup -Biryani masala 2 tbs -Haldi powder (Turmeric powder) ½ tsp -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Namak (Salt) 1 & ½ tsp or to taste -Laung (Cloves) 3-4 -Sabut Kali mirch (Black peppercorns) 4-5 -Darchini (Cinnamon stick) 1 -Hari elaichi (Green cardamom) 2-3 -Adrak lehsan paste (Ginger garlic paste) 2 tbs -Pyaz (Onion) fried 1 Cup -Elaichi powder (Cardamom powder) ½ tsp -Garam masala powder ½ tsp -Hari mirch (Green chillies) 3-4 -Podina (Mint leaves) chopped handful -Hara dhania (Fresh Coriander) chopped handful -Lemon juice 2-3 tbs -Chawal (Rice) Sella 500g (soaked & boiled with salt,whole spices & green chillies) -Tamatar (Tomatoes) slices 10-12 -Anday (Eggs) boiled & halved 4 -Hara dhania (Fresh coriander) -Podina (Mint leaves) -Pyaz (Onion) fried -Elaichi powder (Cardamom powder) ½ tsp -Garam masala powder ½ tsp -Zarda ka rang (Orange food color) ¼ tsp -Doodh (Milk) 2-3 tbs -Hara dhania (Fresh coriander) -Podina (Mint leaves) Directions: -Peel fibrous thread from sides of cluster beans with the help of peeler,cut into 1inch pieces & set aside. -In a wok,add cooking oil,potatoes & fry on medium flame until light golden & take out in a bowl. -Add carrots & fry on medium flame for 2-3 minutes & take out in the same bowl. -Add cluster beans and fry on medium flame for 1-2 minutes & take out in the same bowl. -Add peas and fry on medium flame for 1-2 minutes & take out in the same bowl & set aside. -In a bowl,add yogurt,biryani masala,turmeric powder,red chilli powder,salt,whisk well & set aside. -In the same wok,add cloves,black peppercorns,cinnamon stick,green cardamom & mix well. -Add ginger garlic paste & mix well for a minute. -Add spiced yogurt mixture,mix well & cook for a minute. -Add fried onion (crush with the help of hand),mix well & cook until oil separates (1-2 minutes). -Now add fried vegetables & mix well. -Add cardamom powder,garam masala powder,green chillies,mint leaves,fresh coriander & mix well. -Add lemon juice & mix well,cover & cook on low flame for 8-10 minutes & set aside. -In a pot,add half quantity of boiled rice,tomato slices,prepared mix vegetables korma,boiled eggs, fresh coriander,mint leaves,remaining boiled rice,fried onion,cardamom powder & garam masala powder. -In orange food color,add milk and whisk well. -Add it in pot,fresh coriander,mint leaves,turn on the flame,cover & steam cook on low flame for 15-20 minutes. -Serve with raita & salad!
